BRUSCHETTA APPETIZERS with Garlic, Goat Cheese, Sundried Tomatoes and Cracked Pepper Beef Strips
Ingredients:
4 large heads of garlic
1 8 oz. package of goat cheese
1 6 oz. jar of sundried tomatoes, sliced into strips
1 French or sourdough baguette
1 3 oz. bag of Alexander Gourmet Cracked Pepper Beef Strips, scissored and chopped fine
Olive oil
Directions:
Preheat oven to 425 degrees. Take heads of garlic and cut off tops so the garlic cloves are showing. Place garlic, with wide end down, on baking sheet lined with aluminum foil. Drizzle with olive oil. Bake for 35-45 minutes at 425 degrees until garlic is fragrant. Remove garlic from oven when heads are golden. Let cool for 10 minutes. Carefully break apart cloves. With the tip of a knife, slide cloves out of skins and mash gently in a small bowl and set aside.
Slice baguette diagonally and arrange slices on a foil lined baking sheet and drizzle with a small amount of olive oil. Bake for 10 minutes to warm them. Remove from oven and arrange on a serving dish.
Spread goat cheese on sliced baguettes. Top each slice with a bit of roasted garlic, a strip of sundried tomato, and a small amount of chopped Cracked Pepper beef strips. Serve.
