GUACAMOLE DIP with Jalepeno Chili Beef Strips

Ingredients:
6-8            ripe avocados
1/2 C.        chopped green jalepeno chilis (from a jar or a can)
1                large tomato, chopped
1                scallion, thinly sliced
1 1/2 oz.    Alexander Gourmet Jalepeno Beef Strips, scissored and chopped fine
1                garlic clove
1 t.             lemon juice
1/4 C.        roughly chopped fresh cilantro
Salt and pepper to taste

Directions:
Halve the avocados and remove the pits with a spoon.  Using the tip of a knife, cut lines down the flesh of each half, about 1/4 inch apart and then the same across.  Turn the avocado halves inside out to release the avocado cubes into a bowl.  Mash with a fork.  Stir in the tomato, scallion, garlic, chopped jalepeno chilis, lemon juice, salt and pepper to taste.  Then add the chopped beef strips and mix.  Blend in cilantro, leaving a little for the top as garnish.  Serve with chips or as a side dish with quesadillas.
