STUFFED DATES with Gorgonzola Cheese and Jalepeno Beef Strips
18 Large Medjool dates, pitted
18 chunks of Alexander Gourmet Jalepeno Beef Strips, cut into small enough pieces to fit into date opening
18 chunks of Gorgonzola cheese, cut into small enough pieces to fit into date opening
Balsamic Reduction:
3/4 C. balsamic vinegar
1 ½ T. brown sugar
In a small pot, combine vinegar and sugar. Bring to a boil and reduce heat to low. Simmer 10 minutes to thicken sauce.
Preheat oven to 350 degrees.Slice open dates, and stuff each with a cube of Gorgonzola cheese and 1 piece of Jalepeno Beef Strip.
Place dates on a baking sheet and bake for 12-15 minutes in the oven, turning once.
Caution: These dates are like molten lava when they come out of the oven. Allow several minutes to cool.
Drizzle balsamic reduction over dates, and serve immediately.
