Sweet & Spicy Cornbread Muffins with Jalepeno Beef Strips
Ingredients:
1 C. all-purpose flour
1 C. yellow cornmeal
1 C. canned corn
1/2 C. sugar
1/2 t. salt
2 t. baking powder
1/3 C. vegetable oil
2 eggs
1 C. milk
1-2 oz. Alexander Gourmet Jalepeno Beef Strips, finely minced
Directions:
Preheat oven to 375 degrees. Lightly grease or spray 12 cup muffin tin with non-stick cooking spray. Soak cornmeal in milk for 10-15 minutes.
In a large bowl, combine flour, cornmeal, sugar, salt and baking powder. Stir in egg and vegetable oil until well combined. Pour batter into muffin cups.
Bake for 15-20 minutes, or until a toothpick inserted into muffins comes out clean. Cool and serve with butter, honey or both.
